The soppressata is produced from the noblest and leanest parts of the pig, it is matured for approximately 30/40 days and is ideal for appetizers and cold cuts platters. The soppressata has a very delicate and enveloping flavor and is handcrafted according to the Lucanian tradition with selected pasture-raised pork meat.

Don Francesco Soppressata

The soppressata is prepared according to the ancient Stigliano tradition, cuts of pork leg are selected which are carefully minced into coarser grains and mixed and kneaded, in expertly measured quantities, with salt, black peppercorns and fat lardons.

Thus, a genuine, tasty product is created, compact on the palate, which enhances the taste sensations of the seasoned meat. The mixture, stuffed into natural pig casings, follows a slow process of drying, pressing and artisanal seasoning. It is a product recommended for those who love fine and enveloping flavours.
